VEGAN-FRIENDLY CHOCOLATE MOUSSE

Serves 4 Who says you can't have a creamy and chocolatey dessert that is great, if not better, than the real thing? This chocolate mousse recipe is not only SUPER easy, but also tasty, and a much healthier version than its non-vegan friendly counterpart!


INGREDIENTS


  • 2 tbsp. cocoa powder

  • 2 tbsp. honey or maple syrup

  • 1 tsp. vanilla paste

  • 400ml tin coconut cream

  • handful of raspberries

  • few sprigs of fresh mint


METHOD


  1. Top Tip* I like to buy the coconut cream a few days before I make this, and let it sit in the fridge first, so the coconut cream can set in the tin, beforehand.

  2. In a mixing bowl whisk together coconut cream, honey and the vanilla paste. Once the mixture is well combined, sift in the cocoa powder.

  3. Place the mousse mixture into four espresso cups.

  4. Leave the mousse to chill in the fridge for an hour, or until you are ready to serve them.

  5. Finally, decorate with a fresh raspberries and mint.
